Tex Mex Stuffed Sweet Potato – Weight Watcher Potato Recipe

This is an amazing weight watcher recipe of tex mex stuffed sweet potato. This recipe is loaded with sweet potato, olive oil, onion, red pepper. Tomato, spinach, black beans, chili powder, cumin, garlic powder and cheddar cheese. Tex Mex stuffed sweet potato


  • 4 [four] small sweet potatoes
  • 1 [one] teaspoon of olive oil
  • 1/2 [half] sweet onion
  • 1 [one] chopped red pepper
  • 1 [one] chopped green pepper
  • 2 [two[ chopped tomatoes
  • 4 [four] cups spinach
  • 1 [one] cup canned black beans
  • 1/2 [half] teaspoon of chili powder
  • 1/2 [half] teaspoon of cumin
  • 1/2 [half] teaspoon of garlic powder
  • Salt and pepper
  • 8 [eight] tablespoon of low fat cheddar cheese

Cooking process;

  • Put oven and preheat to 400 [four hundred] degree Fahrenheit
  • Baking potatoes
  • Clean potatoes with fork/knife
  • Put on baking sheet; cook for one hour
  • Microwave potatoes
  • Clean potatoes with fork/knife
  • Put potatoes on microwave dish
  • Cover with damp paper towel
  • Cook potatoes for five minutes; flip
  • Cook again for five minutes; check for doneness
  • Cook again for next five minutes until potato look like soft
  • Put olive oil and heat over medium/high heat
  • Put pepper; onion on it
  • Sauté for five to seven minutes
  • Add one or two tablespoon of water
  • Add garlic powder; cumin; chili powder; black beans; spinach and tomatoes
  • Stir all ingredients
  • Cut potatoes
  • Stuff with vegetable filling
  • Top with two tablespoon of cheese
