  1. 2 large baking potato
  2. 2 tsp olive oil
  3. 2 chopped onion,
  4. 1 cup chopped broccoli,
  5. 1 cup chopped carrot,
  6. 4 minced garlic cloves,
  7. 1⁄2 cup non-fat cottage cheese
  8. 1⁄4 cup chopped parsley,
  9. 2 tbsp grated parmesan cheese,
  10. 1⁄2 tsp ground black pepper
  11. 1⁄4 tsp salt



  1. Preheat oven to 400 degrees F/(200 degrees C).
  2. Poke potatoes with a fork.
  3. Bake for 1 hour.
  4. heat oil in a medium skillet.
  5. Saute onions for about 5 minutes.
  6. Add broccoli-carrot-garlic
  7. stir until softened, about 5 minutes.
  8. Reduce heat, cover,
  9. cook for 4 minutes longer.

  12. Cut potatoes in half
  13. scoop out pulp into a large bowl.
  14. Set skins aside.
  15. Add sauteed vegetables-cottage cheese-parsley-parmesan cheese-salt-pepper to potato pulp.
  16. Mash up well.
  17. Spoon mixture into potato skins.
  18. Place stuffed potatoes on a baking sheet
  19. bake until heated through for 15 minutes.
