  • 1 [one] big roasting chicken
  • 2 [two] tsp of virgin olive oil
  • 2 [two] minced garlic cloves
  • 2 [two] tsp fresh thyme
  • 1 [one] tsp black pepper
  • 1 [one] tsp paprika
  • 1 [one] tsp kosher/sea salt
  • 2 [two] stalks of celery
  • 1/4 [one fourth] cup of water
  • 1 [one] cup of baby carrots
  • 2 [two] medium potatoes

Cooking process;

  • Pat dry and rinse chicken
  • Rub with olive oil to chicken
  • Add spices and rub outside chicken
