This quinoa chicken stuffed pepper is loaded with bell pepper, chicken breast, quinoa, onion, garlic, olive oil, tomato sauce, basil, oregano, parsley, mozzarella cheese and salt. This recipe will cost you 7 points per serving and take time about 55 minutes divided into 15 minutes for preparation and 40 minutes for cooking process.

Quinoa chicken stuffed pepper


  • 6 [six] helved/seeded bell peppers
  • 1 1/2 [one and half] lbs of chicken breast
  • 1/2 [half] cup of uncooked quinoa
  • 1 [one] medium diced yellow onion
  • 4 [four] minced garlic cloves
  • 1 [one] tablespoon of olive oil
  • 15 [fifteen] Oz of tomato sauce
  • 1 [one] tablespoon of dried basil
  • 1 [one] tablespoon of dried oregano
  • 1/2 [half] tablespoon of dried parsley
  • 1/3 [one three] cup of chopped fresh basil
  • 1 [one] cup of shredded low fat mozzarella cheese
  • Pepper and salt to taste

Cooking process;

  • Preheat to 350 [three hundred fifty] degree Fahrenheit
  • Coating in the 11×13 inch baking dish by using cooking spray
  • Heat oil over medium/high heat in the big skillet
  • Add onion and cook for two minutes until look like translucent
  • Add dried basil; dried parsley; chicken; dried oregano; pepper; salt and cook those ingredients
  • Stir and mix in tomato sauce
  • Remove it from heat
  • Add chicken mixture; quinoa in the big bowl
  • Add seasoning; salt and pepper
  • Spoon mixture and top with mozzarella cheese
  • Put in the oven and cook for thirty minutes until cheese look like melted and pepper look tender
  • Before serving, top with fresh basil
