Mediterranean Spinach Strata Recipe is loaded with French bread baguette, cooking spray, onion, garlic clove, mushroom, flour, baby spinach, salt, black pepper, plum tomato, crumble feta cheese, asiago cheese, low fat milk, Dijon mustard, dried oregano, egg, egg white.

 

Ingredients;

  1. 2 (8-ounce) loaves French bread baguette
  2. Cooking spray
  3. 1 cup chopped onion
  4. 4 garlic cloves, minced
  5. 1 (8-ounce) package presliced mushrooms
  6. 1 tablespoon flour
  7. 2 (7-ounce) bags baby spinach
  8. 1/2 teaspoon salt
  9. 1/2 teaspoon black pepper
  10. 3 cups thinly sliced plum tomato
  11. 1 (4-ounce) package crumbled feta cheese
  12. 3/4 cup (3 ounces) grated Asiago cheese
  13. 3 cups fat-free milk
  14. 2 tablespoons Dijon mustard
  15. 1 1/2 teaspoons dried oregano
  16. 5 large eggs
  17. 4 large egg whites

 

Directions;

  1. Preheat oven to 350°.
  2. Place bread slices on baking sheet.
  3. Bake at 350° for 12 minutes.
  4. Heat a large nonstick skillet
  5. coated with cooking spray over medium/high heat.
  6. Add onion-garlic-mushrooms; sauté 5 minutes.
  7. Sprinkle flour over mushroom mixture;
  8. cook 1 minute, stirring constantly.
  9. Add 1 bag of spinach;; cook 3 minutes.
  10. Add remaining spinach;; cook 3 minutes.
  11. Stir in 1/4 teaspoon salt-1/4 teaspoon pepper.
  12. Place half of bread slices in bottom baking dish coated with cooking spray.
  13. Spread spinach mixture over bread.
  14. Top with tomato slices;
  15. sprinkle evenly with feta and half of Asiago cheese.
  16. Arrange remaining bread slices over cheese.
  17. Combine 1/4 teaspoon salt-1/4 teaspoon pepper-milk-remaining ingredients,
  18. stirring well with a whisk.
  19. Pour over bread;
  20. sprinkle with remaining Asiago cheese.
  21. Cover and chill 8 hours.
  22. Preheat oven to 350°.
  23. Uncover strata; bake at 350° for 40 minutes.
  24. Serve warm.
