Grilled Lamb Skewers – Complete meal with Warm Fava Bean Salad

This healthy weight watcher recipe is loaded with fava bean, olive oil, fresh mint, lemon rind, salt, and black pepper, and water, leg of lamb, cooking spray and lemon wedges. This recipe will give you 6 smart points with one lemon wedge, half cup of salad and two skewers.



  1. 4 cups shelled fava beans
  2. 1 1/2 teaspoons extra virgin olive oil
  3. 1 tablespoon chopped fresh mint
  4. 1 teaspoon grated lemon rind
  5. 2 tablespoons fresh lemon juice
  6. 1 teaspoon salt
  7. 1/2 teaspoon freshly ground black pepper
  8. 2 tablespoons water
  9. 1 1/2 pounds leg of lamb
  10. Cooking spray
  11. 6 lemon wedges



  1. Cook fava beans in boiling water for 1 minute or until tender.
  2. Drain, and rinse with cold water. Drain.
  3. Remove tough outer skins from beans, and discard skins.
  4. Combine olive oil, 1/4 teaspoon ground black pepper, lemon rind, lemon juice, chopped mint, 1/2 teaspoon salt, and in a medium bowl
  5. Stirring with a whisk.
  6. Heat 2 tablespoons water in a medium saucepan over medium-high heat, and add beans to pan.
  7. Cook 2 minutes or until beans are thoroughly heated.
  8. Add beans to juice mixture, and toss to coat.
  9. Thread lamb onto 12 (8-inch) skewers.
  10. Coat lamb with cooking spray;
  11. sprinkle evenly with remaining 1/4 teaspoon pepper and 1/2 teaspoon salt
  12. Place skewers on grill rack coated with cooking spray;
  13. Grill 7 minutes or until lamb is done, turning occasionally.
  14. Serve with salad and lemon wedges.
