Cheesy chicken enchiladas


  • 8 [eight] Oz of low/free fat velveeta cheese
  • 1⁄2 [half] cup of low/free fat sour cream
  • 1⁄4 [one fourth] cup of low/free fat evaporated milk
  • 1⁄4 [one fourth] cup of minced scallion
  • 1⁄4 [one fourth] teaspoon of crushed red pepper
  • 3 [three] cup of cooked chopped chicken breast
  • 6 [six] medium of whole wheat tortilla
  • 1⁄4 [one fourth] cup of low/free fat cheddar cheese
  • 6 [six] medium of sliced black olives
  • 1⁄4 [one fourth] cup of salsa
  • 1 [one] cooking spray

Cooking process;

  • Preheat to 350 [three hundred fifty] degrees Fahrenheit or 175 [one hundred seventy five] degree Celsius
  • Coating; cooking-spray to baking-dish
  • Add sour-cream; velveeta in the microwave bowl
  • Cover and set microwave to medium/high level for one – two minutes until cheese melted
  • Remove melted cheese to small bowl
  • Stir melted cheese in the evaporated milk
  • Set aside
  • Put red pepper; scallion; chicken to cheese mixture
  • Stir and coat it
  • Take 2/3 [two three] cup of chicken mixture to tortilla
  • Fold tortilla; cover filling; put in the single layer of dish
  • Take cheese sauce; cover on top enchiladas
  • Sprinkle with olive and cheddar cheese
  • Baking for twenty or twenty five minutes until cheese look bubbly
  • Serve cheese chicken with salsa
